This one one of the easier and healthier dishes anyone can learn to make. I first learned about it in college. It’s basically a healthy version of chilli minus the meat and beans. The recipe is tomato based and it’s traditionally a middle eastern meal. The thing about Shakshuka is you can prepare it with many different variations it’s a very flexible meal. The main recipe basically uses eggs as the protein source but I’ll use some kilbasa sausage usually in place of the eggs. Here’s one recipe:

An important thing to keep in mind while preparing this is to make sure it cooks long enough because the tomato sauce needs to be condensed down for a nice consistency. Otherwise it’ll come out too soupy. This might be an obvious thing to a more experience cook but it’s something I messed up with a few times.

The way I make this dish is first setting the dial to medium heat with a big sauce pan. I put a little olive oil and wait for it to heat up. Then I throw in a diced half onion and let it soften. While its softening I’ll cut up my peppers usually red and yellow sweet peppers. Sometimes I’ll cut up some other veggies like broccoli it really depends on whatever your in the mood for. It’s very versatile as I said. Then I’ll throw the peppers and other veggies in. Then I add in the garlic and stir for about a minute. Then throw in the diced tomatoes and the tomato paste. This is also the time to add the spices. The recipe calls for a tablespoon of paprika, cumin, chili powder, some salt and pepper. After this you let it cook for about 20 or so minutes to let it condense down. Then finally add in whatever protein and voila!
